Toasted Open Faced Tomato, Avocado and Cheese Sandwich

Most days that we are home we have a sandwich for lunch. In fact, when Anita was through preparing lunch today, she suggested that we photograph this sandwich and share it on our blog. It is her favorite lunch sandwich. Made from all organic ingredients it is delicious, mild in flavor and quite satisfying.

She starts with a lightly toasted artisan bread like 'sourdough batard'. On this she spreads mayonnaise or a mild aioli. She then puts on a slice of heirloom or other tomato and covers that with avocado. On that she places a slice of tasty cheese like pepper jack and trims to fit. She than sprinkles on a little smoked paprika and places it in our toaster oven on broil until the cheese has just started to melt. She removes the sandwich and cuts it in half.

Served right out of the oven, it is warm and comforting; but I have to admit that I usually have three to four pieces while she finds two enough.
