The Other BLT Sandwich - The BACT


Anita and I are on a sandwich binge; hamburgers, BLTs...well not exactly BLTs, more BACTs. Of course you wonder what is a BACT? Bacon, Avocado,Cheese and Tomato on a jalapeno-cheddar roll. Beautiful, mostly organic and delicious. One of these is enough for Anita and me as we are not big eaters. But if you are; a side salad or two sandwiches or chips, fries or whatever would fill out a meal nicely.
First we cooked 4 pieces of bacon until they were fairly well done but not burnt. We removed them, dried off the extra grease and folded them in half while they were still soft. While the bacon was cooking, we lightly toasted one jalapeno-cheddar roll from our local Safeway and sliced an organic beefsteak tomato and an organic avocado.

Assembly was simply the application of a little mayo to both halves of the roll, then a layer of tomato, the bacon, the cheese and into the oven briefly to melt, then out, add the avocado. Place the top of the roll on the sandwich, cut and serve. It was a delicious and healthy meal even though incredibly un-paleo.

A mild red goes very well with this sandwich; and I am sure a good beer would also.
