Anita and I love crab sandwiches. In fact she insists that we spend at least one day in Bodega Bay every year so that we can enjoy a fresh caught Dungeness crab sandwich at The Spud point Crab Co. Well we have decided to make the ultimate crab sandwich; a sandwich so tasty that Joe will be jealous, if there really is a Joe. So here is our recipe for the beautiful sandwich shown above. Trust me to tell you that it is truly delicious. Very fresh and crisp from the onions, jalapenos and lemon zest.
Makes: 1 large sandwich
Serves: 1 or 2 people depending
Prep Time: 10-15 minutes
Cooking Time: none
INGREDIENTS:
8 oz of fresh Dungeness crab if possible; canned claw meat or snow crab meat can be substituted
1/3 C organic mayonnaise
2 T fresh chives, chopped
2 T lemon zest, zested in long strips
3/4 t Crab Boil seasoning
1/4 red onion, chopped small
1 green jalapeno pepper, seeded and chopped small
1 large Jalapeno-Cheddar Roll from Safeway, or equivalent about 9 inches long
PREPARATION:
1. Prepare crab meat depending on which you are using.
2. In a medium bowl, mix all the ingredients well.
3. Split the roll and toast lightly.
4. Fill the roll with the prepared crab.
NOTE:
We didn't use it, but some people might like it with a little fresh lemon juice sprinkled on the crab.
