Well we previously posted chocolate biscotti with almond slivers. Because that was so good, we decided to make almond biscotti with chocolate chips. But instead of just using almond flavoring we took it to the next level with Amaretto, an almond liquer...Wow!
Makes: 25 pieces
Prep Time: 30 minutes
Cooking Time: 50 minutes plus 10 minutes cooling time
INGREDIENTS:
2 ¾ C flour
2 T baking powder
1/3 C white sugar
1/3 C brown sugar
1 T almond extract
1 T walnut oil
3 eggs @ room temperature
2 T Amaretto
½ package chocolate chips
PREPARATION:
1. Preheat oven to 350 degrees.
2. Combine flour, baking powder, sugars in a large bowl and mix. Reserve.
3. Combine extract, oil, eggs and Amaretto in a small bowl and whisk together.
4. Add the wet mixture to the flour mixture and blend with a wooden spoon.
6. Add the chocolate chips.
7. While dough is in the large mixing bowl, knead it until all the ingredients are mixed together.
8. Divide dough in half and spread each half onto a wooden chopping block sprinkled with flour.
Shape each portion into an 8” long and 1” thick loaf.
9. Transfer both pieces onto an oiled cookie sheet.
10. Bake for 30 minutes. Remove from oven and cool on a wire rack for 10 minutes. Cut into ½” slices and place them back on the cookie sheet. Turn each piece on its side and bake another 10 minutes.
11. After 10 minutes, flip each piece over and bake for another 10 minutes.
12. Remove from oven and cool on wire rack.
Try these as is or dunked in coffee, tea or milk...delicioso!
